Nigerian Fried Rice

Nigerian Fried rice, I said Nigerian because growing up fried rice only had vegetables and liver and now all sorts are put in fried rice from eggs to sausages to shrimps and even soy sauce Not that I don’t enjoy those, for this recipe I am going old school the way my mama made it.

Ingredients

  • Rice
  • Vegtable oil
  • Liver
  • Carrot
  • Green beans
  • Green pepper
  • Sweetcorn
  • Curry
  • Thyme
  • Chicken or beef
  • Salt
  • Onions

Instructions

 

Wash and boil meat/ chicken with thyme, knor cubes and onions and water.

Cook liver with salt and chop into cubes

Chop carrots and green beans into small cubes

Slice green pepper into long thin slices

Separate stock from chicken/Beef. Fry Chicken or beef and keep aside

Wash rice and boil rice in stock and some curry until its soft

Get a frying pan or wok and fry oil with onions

Add chopped carrots and green pepper, green beans into the frying pan, also add sweet corn and boiled liver

Add salt, knor and curry to taste

Allow to fry until vegtables are a bit soft

Then mixed the vegetable mixture with cooked rice and serve with chicken or beef

Kitchen items needed:

  • Pot
  • Wok or frying pan
  • Chopping board
