MoiMoi, is a Nigerian delicacy made from beans, its one of the last dishes I learnt how to prepare growing up because it always seemed difficult when my mum made it with all the steps and processes. You can eat moimoi with so many things, it can be eaten as breakfast, lunch, dinner, as a main dish and as a side. Making moimoi is easier now because there are easier ways of making it thanks to food processors (which saves you the stress of going out to grind in the market) There are different ways moimoi is made, with egg, fish, cornbeef, recently I saw where sausage was used in moimoi whew. Anyways my recipe is for beginners level.
Ingredients
- Beans
- Onion
- Tatase
- Pepper
- Salt
- Knor cubes
- Vegtable oil
- Crayfish (optional)
- Eggs
- Fish
- Moimoi tin containers
Instructions
Soak beans for 5mins and pound a bit till the peels start falling off, wash and rinse off remaining peels till beans is white and clean
Boil eggs and slice into smaller pieces.
Put beans, tatase, pepper and onion and small water into blender or food processor and blend until you have a smooth creamy paste
Pour mixture into bowl, add knor cubes, salt crayfish and dry fish and mix
Pour small portions of mixture into tin containers
Add slices of eggs in each container
Boil water in a pot, the water leave shouldn’t get to half of the pot.
When water is boiled, put tin container in pot, one on the other and leave to cook for an hour
Put a toothpick in the middle to check if its watery and raw in the middle if not it is ready.
Serve with pap, oats,bread, rice etc.
Notes
Important things to note is you can use nylon or leaf for your moimoi, the tin container is just my preference. Also just like akara you need to be more careful with your salt input because it absolves a lot of salt and you don’t realize it until its late. Steam is what cooks moimoi so you don’t need to fill up pot with water just because you are cooking moimoi.
